French Bistro & Café | Park Slope, Brooklyn
We are looking for an experienced Lead Line Cook / Junior Sous Chef to join our kitchen team in Brooklyn.
This is a hands-on cooking and leadership position, not an office management role.
Our café /Biostro has been part of the neighborhood for 16 years and serves a loyal community of regular guests. We work with quality ingredients, with an emphasis on organic and seasonal products. Consistency, strong recipe standards, disciplined execution, and attention to detail are central to our kitchen.
We are looking for a skilled, reliable cook who is comfortable working both the line and prep, while also being able to confidently take responsibility for the kitchen when the Chef is not present.
Responsibilities
* Work confidently across multiple stations
* Lead and organize service when the Chef is absent
* Maintain consistency in seasoning, plating, portioning, and recipe execution
* Organize daily prep and station pars
* Coordinate ticket flow and kitchen communication during service
* Supervise and support line cooks and prep cooks
* Maintain proper labeling, FIFO, sanitation, and NYC DOH standards
* Assist with receiving, inventory, and ordering when needed
* Train cooks on recipes, techniques, and kitchen standards
* Communicate shortages, 86s, and operational issues clearly to the Chef
What We Are Looking For
* 3+ years of professional kitchen experience
* Strong line cooking and prep skills
* Experience as a Lead Line Cook, Chef de Partie, Junior Sous Chef, or Sous Chef preferred
* Good understanding of French cooking techniques is a plus
* Strong organization, communication, and sense of ownership
* Ability to take responsibility for the kitchen when the Chef is not present
* Reliable, calm, and professional under pressure
* NYC Food Protection Certificate preferred
This position is ideal for an experienced line cook ready to take the next step, or a junior sous-chef who wants to remain hands-on while developing stronger leadership and operational responsibilities.
